This extremely useful wallchart covers an area in which pupils often find difficult to remember. Topics include- eggs (emulsification, aeration, coagulation and glazing), combining ingredients (foams, gels, emulsions), the uses of fats and oils, and starches, including modified starches. It also explains 'Sineresis'.
CONTAMINATION AND PRESERVATION
Gives practical advice on micro-organisms that affect food (yeast, mould, bacteria), high risk foods and how to avoid contamination and cross-contamination. The preservation section covers most methods of chemical preservation, freezing and chilling, and other methods such as irradiation, MAP, pasteurisation and accelerated freeze-drying.
NUTRITION
Explains the Plate of Good Health in a visual way. However, this wallchart goes further by explaining each section in detail, including the functions of vitamins and minerals and where they can be found, all types of fats, proteins (HBV and LBV) and alternative proteins, and the types of carbohydrates, including NSPs.
LABELLING

This wallchart covers the purposes of packaging and the pros and cons of various packaging mediums such as glass, aluminium, paper/board and plastic. This is also a section recycling, and the considerations that manufacturers should make when deciding what type of packaging should be used.
